Do I have to do this in Photoshop, or is there some output setting that I’m missing?

Thanks,

...and Merry Christmas!

In material editor, plug the map into a Colour Corrector, reduce the saturation, plug the output of the CC into the environment slot.
Or do it in Photoshop.
