You are correct in how to uninstall the plug-in:
1. Close any Quicktime players that are running
2. Erase - /Library/Quicktime/QTFbx.component
3. Erase - /Documentation/Autodesk/Autodesk FBX Plug-ins/…
Alternately, if you’d like to keep the plug-in but avoid the lag when clicking on large FBX files, you could set your Finder properties to not preview Quicktime files. Essentially what is happening, is that when you click on the FBX file, Quicktime launches in the background, and if it is a large FBX file, then it will take several seconds, even minutes to load and display into the Finder window.
