Hi - I come from another 3D program and finally upgraded to Maya.  In the old program you could create a “pose slider” - for example if you wanted the top to open on a pocket watch the “pose” would be 0-100 0 being closed and 100 being opened.  Then in the animation you would simply select the object set to 0 then further down the timeline set it to 100 and have it open.  My question is what is the best way to do this in Maya - would you create a pose, or use a deformer? or something else.  Thanks for you help - I have been all over online and looking through several manuals.

What you describe can be done with Set Driven Keys in Maya.

for more complex posing, maybe you can try the “recordPose” script
