I was wondering if there is an operator stack in Maya just like in Softimage XSI. For example if I move a poligon then move another and so on can I come back and reset the first one without using undo and not change the rest of polys that I have changed?

To control a polygon (vertice or any other component) select the polygon and then choose in Maya
Polygon Menue:
Edit Mesh -> Transform Component
If you have construction history on you can change the settings for translation, roatation and scale at any time by selecting this
transform node.
