This is a great question...but more a rigging question than animation.
There are a few ways to do this, but my suggestion is to create your eye as a perfect sphere and then apply a lattice to deform it to the desired shape. This really helps with things like making the eye lids close easily around the eye as well.
This link gives you a very basic idea of how to approach setting up an eye like this.

One question you might have is “This is great for a floating eye...but my eyes are in the geometry of the whole head.
Well, just select the verts of the eye socket and a bit of the face surrounding the eye, then select the geo of the eyeball. With all of that selected Create a lattice. Start moving the lattice points to shape the eye. Lattices usually give you nice fall-off for deformations...but you may want to delete the lattice and create it again with a larger or smaller selection of surrounding verts to get the shape you are looking for.
If you feel really crazy you can use the Edit membership tool to add or remove verts to the lattice...but that can be a finicky tool.
I have attached to pics of a character I made with big cartoony eyes.
The first picture shows the final shape of the eyes and face.
The second shows you the model before I applied the lattices.
Hopefully this gets you going in a good direction.
All the best
~Ben
