Question: Which is better to use when Modeling?

As I was working on tutorials on how to make a model of a body, I spotted a flaw in my skills. I wasn’t using the right command to add more subdivisions to my object.

I tried to smoothing command, or the command that let’s you add or take away subdivisions in order to clean a mesh up from Z-Brush (think I spelled that wrong...). But not what I need for modeling my character.

I would also like to know which way is better to make a body. I think a cylinder is better, (Mainly because a tutorial dumb-ed it down for me) or you can, as it said, “make things harder on yourself and use a cube.
